During our collaboration with Strada del Vino Soave we had the honor of visiting the Rocca Sveva winery located just outside the walls of Soave. An ancient villa, with a huge park, transformed into a wine cellar. Rocca Sveva wines are produced here, from the white Soave Classico to the reds of Valpolicella up to international wines. CANTINE / WINE CELLARS : Troviamo ad accoglierci Margherita, pronta a farci conoscere la Cantina e la storia dei vini Rocca Sveva. Pensate che la cantina è scavata nella roccia del Monte Tenda, sopra al quale sorge il Castello di Soave. Non vediamo davvero l'ora di esplorarla! Cominciamo la visita passando sotto il punto di raccolta dell'uva, qui comincia il processo di vinificazione conosciuto come "modello francese", ovvero su più livelli per sfruttare la gravità nelle varie fasi di movimentazione del vino, riducendo al minimo l'utilizzo di pompe e quindi il rischio di guastare le proprietà del vino stesso. La parte che più ci ha affascinato è sicuramente quella delle grotte sotterranee, un sistema di oltre duemila metri quadri che si sviluppa sotto il castello. Qui la temperatura e l'umidità si mantengono naturalmente costanti, le condizioni perfette per l'affinamento dei vini. Ed eccoci in un lungo tunnel sotterraneo, davanti a centinaia di bottiglie che ogni giorno vengono girate di un quarto di giro a a mano. Siamo nelle grotte sotto il Castello di Soave e l'atmosfera tra botti e bottiglie è davvero magica. The part that most fascinated us is certainly that of the underground caves, a system of over two thousand square meters that develops under the castle. Here the temperature and humidity are naturally kept constant, the perfect conditions for aging wines. And here we are in a long underground tunnel, in front of hundreds of bottles that are turned by hand every day. We are in the caves under the Soave Castle and the atmosphere between barrels and bottles is truly magical. Continuiamo la nostra visita risalendo dalle grotte e dirigendoci verso il vigneto sperimentale. Cos'è un vigneto sperimentale? È proprio quello che abbiamo chiesto a Margherita. La risposta è semplice: un vitigno dove si fa ricerca sulle uve, si testano nuovi blend, si formano i soci della Cantina e così via. A fianco del vigneto c'è il parco botanico di Rocca Sveva, l'antico parco della villa dove tutte le specie arboree sono state catalogate. Il punto più scenografico è sicuramente la Terrazza Verde dove vengono organizzati eventi come il pic nic in vigna, aperitivi al tramonto e cene con una vista mozzafiato su Soave, i suoi vigneti e il castello.
